INGREDIENTS

Stuffed Beet Salad 

 

Four PORTIONS

 

Here is an attractive and unusual luncheon salad that you will like if you enjoy vegetable combinations.

Four medium sized cooked beets

One-half cup chopped celery

Two level tablespoons chopped sweet pickles

One level tablespoon chopped onion

One level teaspoon salt

One-fourth level teaspoon paprika

One cup mayonnaise

Four lettuce leaves

RECIPE

 

Remove part of the insides of the cooked I order to form a case. Mix the celery, pickles,onion, salt, paprika and two tablespoons of mayonnaise. Arrange the filled beets on the lettuce leaves. Place the rest of the mayonnaise over the top. Serve very cold.
