Italian Mint Sauce

 

 

 

 

Mint sauce Mint pesto

ingredients: 1/2 cup mint leaves, 1 tablespoon oil, garlic to taste

 

This is easy to prepare and tasty!!

 

Crush the mint leaves with the oil and garlic with a mortar and pestle.  (If you don't have a mortar, chop the mint very finely with a knife.  I don't recommend using a blender because you won't get a good consistency.)

 

This sauce is excellent on fried or baked eggplants, as well as

lamb and boiled meats.
